We are looking for an experienced Cook specialized in Indian cuisine to join our restaurant kitchen in Luxembourg. The candidate will be responsible for preparing, cooking and presenting authentic Indian dishes according to the restaurant's recipes, quality standards and hygiene requirements.
The cook must have strong professional experience in the preparation of Indian specialties, including curries, biryanis, tandoori dishes, dals, vegetarian and non-vegetarian dishes, rice preparations, chutneys, sauces, marinades and Indian breads such as naan, roti, chapati and paratha.
The position requires excellent knowledge of Indian spices, spice blending, curry bases, tempering, marination, tandoor cooking, grilling, frying and slow-cooking techniques. The cook must be able to adjust seasoning, taste, texture, aroma and presentation to ensure consistency and authenticity in every dish.
Main duties include preparing ingredients, cutting vegetables, meat and fish, preparing spice mixes and marinades, cooking Indian dishes, plating food, storing and labelling products, respecting the cold chain, and maintaining a clean and organized workstation.
The cook must follow HACCP or similar, food safety, hygiene, cleaning and disinfection procedures at all times. The candidate must also be able to use kitchen equipment safely, including ovens, hobs, fryers, griddles, blast chillers, knives and tandoor equipment.
The ideal candidate should have previous professional experience in an Indian restaurant or in a kitchen preparing a full Indian menu. Experience only in other South Asian cuisines without proven Indian cuisine experience will not be sufficient for this position.
The candidate must be able to work under pressure during busy service periods, follow recipes accurately, coordinate with the kitchen team and maintain consistent quality, portion size and presentation.
Required profile: Minimum 5+ years of professional experience preparing Indian cuisine; knowledge of tandoor cooking, curries, biryanis and Indian breads; good understanding of hygiene and food safety rules; ability to work in a professional restaurant kitchen; basic English required, Hindi considered an advantage.
Remarks: Weekend work required, holidays on weekdays, with rotational between the kitchen staff.
Diplomas:
• Diploma or certificate in Culinary Arts, Hotel Management, Food Production, Catering or equivalent professional kitchen experience.
• Specialization or proven experience in Indian cuisine is required.
Trainings:
• Training in Indian cuisine preparation, including curries, biryanis, tandoori dishes, dals, rice dishes, sauces, chutneys and Indian breads.
• Training in tandoor cooking, spice blending, marination, food preparation, hygiene and kitchen safety.
Certifications:
• HACCP / food hygiene certification or willingness to complete it.
• Certification in culinary arts, food production or Indian cuisine will be considered an advantage.
Other skills required (IT, ...):
• Knowledge of Indian spices, curry bases, tandoor techniques, vegetarian and non-vegetarian Indian dishes.
• Develop seasonal menus while preserving authentic Indian flavours.
• Maintain consistent taste and presentation, respect hygiene rules, manage food storage, use kitchen equipment safely and work under pressure in a restaurant kitchen.
• Basic English required; Indian language, Hindi, is an advantage.
